Vandaag een iets meer uitgebreide Friday Favourites. Ik geef jullie niet alleen foto’s, maar ook het recept van deze heerlijke salades. Yum!
Salade met kip en mango
Ingrediënten (4 persons)
600 g kip of kalkoenfilet
150 g gemengde sla
1 rijpe mango
250 g cherrytomaten
enkele muntblaadjes
kipkruiden
honing
mangoazijn of frambozenazijn
bloem
peper
fleur de sel
Bereidingswijze
Kipfilet in reepjes snijden, bloem mengen met kruiden in plastiek bakje, kipfilet toevoegen, bakje afdekken en de kruiden en kip zodanig schudden zodat de bloem helemaal rond de kippenreepjes zit. Nu maak je de salade: tomaatjes in de helft, mango in reepjes, salade grof erbij, peper, fleur de sel, honing, mangoazijn goed mengen. De kipfilet bakken in olie of boter. Ondertussen sla op bord leggen en als de kip gaar is erbij leggen en serveren. Warm en koud geeft een smaaksensatie. Deze salade is superlekker en caloriearm.

Greek Salad with Zesty Dressing
Greek Salad Ingredients:
1 head romaine lettuce, washed, chopped and completely dried
1/2 medium red onion, sliced
1/2 red, orange or yellow bell pepper, seeded and sliced
1 cup cherry or grape tomatoes, halved (or slice heirlooms when in season)
1 medium cucumber, diced
1 avocado, cubed
1/2 cup kalamata olives (about 20 olives), sliced into thirds, optional
1 oz feta cheese, or to taste
Zesty Greek Dressing:
2 Tbsp Extra Virgin olive oil
Juice from 1 lemon, freshly squeezed (about 2 1/2 Tbsp)
1/4 tsp Sea Salt
Pinch of Black pepper
1. To keep lettuce crisp: rinse your romaine lettuce in cold water, then use a salad spinner to dry completely. Refriger
ate until ready to use. Note: if you refrigerate salad that is wet, it will get mushy.
2. Place your chopped and dried romaine in a large salad bowl along with sliced red onion, sliced bell peppers, halved tomatoes, diced cucumber, diced avocado and kalamata olives if using.
3. Just before serving, add the dressing and sprinkle with feta. Toss the salad to combine and serve right away.

Skinny Taco Salad
Skinny Taco Salad Ingredients:
- 1 head Romaine lettuce, washed and roughly chopped
- 1 avocado, peeled, pitted and diced
- 2 cups cherry or grape tomatoes, halved (if desired)
- 2 cups fresh cilantro leaves, loosely packed
- 1 cup shredded sharp cheddar cheese (I used the 2% lowfat cheese)
- 1 cup tortilla strips
- 1 can black beans, rinsed and drained
- 1 can whole kernel corn, drained
- 1 can black olives, drained
- half of a small red onion, halved and thinly sliced
- skinny cilantro lime dressing (see below)
Skinny Cilantro Lime Dressing Ingredients:
- 1 cup fresh cilantro, loosely packed
- 1/4 cup orange juice
- 3 Tbsp. lime juice
- 1 Tbsp. honey (optional sweetener)
- 1/4 tsp. ground cumin
- 1/8 tsp. salt
- 1/8 tsp. freshly-ground black pepper
- 2 Tbsp. olive oil
Make the Salad
Toss all salad ingredients together until combined, or serve “rainbow-style” lined up on top of the lettuce. Drizzle and toss with honey lime vinaigrette and serve.
To Make The Dressing:
Add cilantro, orange juice, lime juice, honey, cumin, salt and pepper to a food processor or blender and pulse until combined. Gradually stream in the olive oil while pulsing until combined.
